Old Fashioned Tomato Soup

INGREDIENTS

  • 1 Tbsp unsalted butter
  • 1 small to medium onions, finely chopped
  • 1 cloves garlic, minced
  • 1 28 oz can crushed tomatoes
  • 1/2 c chicken stock
  • 6 leaves chopped basil
  • 2 tsp sugar
  • 1/4 tsp pepper
  • 1/4 c half & half or heavy cream
  • 2 Tbsp grated parmesan cheese

DIRECTIONS

Melt butter in large pot over medium heat. Saute chopped onions in butter for about ten minutes. Add minced garlic and saute an additional minute. Now mix in crushed tomatoes, chicken stock, chopped basil, sugar and pepper. Bring to a boil then reduce to a simmer. Partrially cover pot and let cook for about ten minutes. Mix in cream (or half & half) and cheese. You can serve it as-is, or if you prefer it smooth, blend it using an immersion blender, or a standard blender. Just be very careful using a regulkar blender with hot liquid! Make sure not to fill the blender container more than 1/3 full and use a heavy towel over the lid, then blend very slowly to prevent an axplosion of hot liquid. Serve with fresh, crusty bread or my favorite.. a delicious grilled cheese sandwich.
