Welcome to the last Friday of July. We have achieved peak summer, both in time and more importantly, produce. Corn, tomatoes, stone fruits, and berries are all at peak levels of taste and availability. Now is the time to make all the tarts, pies, salads, and anything else that highlights their delicious flavors at the purest.

This week I’m bringing you a few recipes which I hope will do just that. My heirloom tomato tart is the perfect way to taste beautiful sweet flavorful tomatoes at their ripest. Make the tart shell, then let the mild and creamy ricotta base and bright fresh tomatoes complement each other.

Or, if you aren’t in the mood to make pastry, make a quick and colorful peach, tomato and burrata salad. The peaches and tomatoes get a tangy sweet dressing of oil, vinegar, and honey. Combined with the creamy burrata, it’s a perfect light lunch or dinner, especially paired with some grilled bread. Or serve alongside burgers or grilled chicken for a fresh side.
